I welcomed another year this month...  The past few weeks have been so crazy that I decided I to celebrate even though I said I wouldn't.  I kicked off my birthday weekend by getting tatted with my thrift sister Tiffany and ended it with dinner & dancing with the besties.  I know this phrase is worn out, but I turned all the way up, LOL!!!  It felt awesome to let my hair down for the first time since forever.  I definitely needed it!

We've had a few warm days in the A, but by enlarge it's been hit or miss. I'm ready for a wardrobe of carefree dresses and sandals!  Since the weather isn't cooperating, I improvised this weekend and added a few layers...I was still cold, lol!!! We haven't had it nearly as bad as some areas of the country so I won't complain but I'll definitely be happy when I can put away my winter clothes and space heater.

Low Carb Diet: Spaghetti Squash

I'm nearly 2 weeks into my low carb diet!  Everyday is a challenge, but there are also some great rewards.  The weight has been consistently dropping.  I've dropped a digit in the tens category (as in ones, tens, hundreds...) which I'm super excited about!  I've also been getting a little more creative with cooking.  I made spaghetti for Sunday dinner, which is one my staples.  To make it low carb friendly, I used spaghetti squash.  It was yummy!  My daughter, who still at 15 isn't very fond of veggies, even thought so.  It's super easy to make other than cutting the darn squash. 1 spaghetti squash
1 lb. ground turkey
spaghetti sauce
2 tsp. olive oil
sprinkle of garlic salt and pepper
Cooking instructions:
Preheat oven to 450 degrees Fahrenheit. Carefully cut spaghetti squash in half (requires sharp knife). Use spoon to remove stringy stuff and seeds.  Rub olive oil inside, sprinkle with garlic salt & pepper, and bake uncovered 30-40 minutes.  Brown ground turkey, season as desired, and add spaghetti sauce.  After 30-40 minutes, remove squash from oven and use a fork to pull apart the inside layers (spaghetti).

Low Carb Diet: Feta Bake

I decided to do low carbs for Lent.  I know this diet is pretty controversial especially from a scientist's perspective, but I like it because  it's a guaranteed way to lose just have to make sure you don't lose your mind! I plan to drop a few pounds and then stabilize with healthy eating, portion control, and exercise.  I also decided to research some low carb recipes in order not to be relegated to a life of grilled chicken and green veggies.  I made feta bake from a recipe adapted from the Winsor Low-Carb Cookbook.  It turned out amazing!  I'm actually looking forward to more low carb yumminess. Scroll down for the recipe :-).

2 mini sweet peppers
6 ounces of frozen spinach
4 eggs
4 ounces of crumbled feta cheese
1/2 teaspoon minced garlic
sprinkle of garlic salt and pepper

Add 1/4 cup of water to spinach, boil until thawed, and drain. Dice and saute peppers.  Preheat oven to 350 degrees Fahrenheit.  Beat eggs, garlic, and seasonings.  Add spinach, peppers, and feta.  Pour into a greased baking dish, bake for 20 minutes, and enjoy!

Painted Dining Table

So everything in my life right now is "When the kids go to college..."  Since I plan on being a world traveler, I've decided not to invest in anymore furniture.  Fortunately, I invested in sturdy classic pieces many moons ago when I became a grown-up and ditched my futon.  Unfortunately, I'm bored with it.  I am really considering sanding and painting my dining table.  I'm in love with yellow right now, but can't go with that since I've kinda gone overboard with yellow in the living room.  Here are some of my favorites.  Which one do you prefer?

It was unseasonably warm in the A this weekend so I took advantage of the moment and broke out my pum pum shorts.  Because it goes directly from winter to summer here, these vegan leather overalls will be very short lived.  They are also very short, but F* it I'm nearly 40! I promised my daughter that she can take these with her when she goes away to college, so hopefully I'll get a couple more opportunities to wear them ;-).

Life Maintenance: Do Better

As non PC as this video is, I can't help but think of it every time I hear the phrase Do Better...
That phrase pretty much sums up where I am right now.  Between the kids, grad school, and my other projects I have been completely exhausted...exhausted to the point where falling asleep in bed with my laptop, fully dressed, glasses and lights on has become the rule rather than the exception.  Of course this leads to a domino effect...stiff neck, migraines, and looking like hell the next day because I neglected to tie up my hair.  After dealing with this for weeks months, I had to make some changes because I was running on fumes.  I've had to be a little OCD to get back on track.  Here are the steps I took:
1. Created an evening routine
It starts with dinner, planning for the following day, etc.  It also includes winding down and going to bed at a reasonable hour intentionally.
2. Eating more
Yes, you heard me right.  Although I've been complaining about putting on a few pounds, I believe my weight gain was caused by skipping meals and then making bad choices as a result.
3. Taking a multivitamin
Although I'm a proponent of getting nutrients from food, having a few extra dollars is the bank is always a good idea!
4. Spending time on things that will assist in accomplishing goals
There's so much inspiration everywhere and we all love to peruse our time lines.  Limiting this to certain times has helped me find time I didn't know I had.
5. Stop and smell the roses
I know it sounds cliche, but it's true.  I walked to the park yesterday and just took in all of the sights and sounds.  I haven't exercised in months so I was completely exhausted afterward!  I slept like a baby and was in a wonderful mood all day today :-).
Since I've implemented these changes, I feel so much better.  I even feel like I look different, but since no one's said anything I'll keep that to myself, lol.  It's crazy that sometimes we get so consumed with life that we forget to live...
